- The Flaky Vegan
World War II (accidentally vegan) fruit loaf

This recipe popped up on a facebook page I follow...Accidentally Vegan, and was kindly shared by a lady called Rachael who found this as a World War 2 rationing recipe which was accidentally vegan. I tweaked it a little, and was lovely still warm, with lots of Flora Butterly on, but before that was fat free!
I used a 2lbs loaf tin to bake in and lined with greaseproof paper to excess so the loaf pulled out easily.
Ingredients
1 cup of water
1/2 cup dark muscovado sugar
1/2 cup demarara sugar
1 cup of raisins
Dairy free spread for greasing
1tsp cinnamon
1/2 tsp mixed spice
1/2 tsp baking powder
1/2 bicarbonate of soda
1 1/2 plain flour
Method
Put the water, sugar, raisins and spices into a pan and bring to the boil, then simmer for 5 minutes and leave to cool
Preheat the oven to 175C
Grease and line a loaf tin
Mix the rest of the ingredients into a bowl and add cooled raisin mix and mix well. Transfer to the prepared tin and bake for 40 minutes. Check that a skewer comes out clean, if not cook for a further few minutes
Remove, cool slightly, then slice and serve with dairy free spread
