This is quite possibly the easiest vegan food I have ever made! Tasty chicken like pieces that can be eaten hot or cold, in hot dishes or salads and sandwiches and keeps well in the fridge. This was the best chicken style salad wrap I have had since....well....a chicken and salad wrap!!
I can take zero credit for this creation! I saw a post on a vegan group on Facebook who shared this idea, but they in turn couldn't remember where they had seen it. So with a teeny tweak or two, here is my new vegan addiction. You're welcome.....;-)

1 396 block of firm tofu
1/4 cup nutritional yeast
1 tbsp olive oil
1 1/2 tbsp light soy sauce
1/2 tsp garlic powder
A good grind of fresh black pepper
Preheat the oven to 210C and wrap the block of tofu up in a clean tea towel and gently press to remove some of the liquid
Put all the other ingredients into a mixing bowl and give a good stir
Crumble the tofu into rough bitesize chunks and gently stir into the mix until evenly coated
Tip onto a non stick baking sheet and bake for 15 minutes. Turn the pieces over and bake for a further 15 minutes.
Use at will and buy more tofu to repeat! :-)
