Silken Tofu "Egg"Scramble

I have tried making scrambled egg before now with firm tofu. It was nice, but always used to like my scrambled eggs slightly softer, so silken tofu makes a great alternative for softer, creamier vegan scrambled "egg"
Really simple to make and reheats well too. The Black Salt is important as it adds the eggy flavour, the turmeric is for colouring only and is tasteless in this small quantity, but makes your finished dish look a bit more like the real deal
1 300g carton of silken tofu, with the liquid drained
1/2 tsp onion powder
1/2 tsp black salt
1/4 tsp turmeric
1/2 tbsp vegan butter, I used Flora
Freshly ground black pepper to taste
Gently break the tofu into pieces in a bowl
Melt the butter in a pan and add all the other ingredients except the tofu and mix in
Gently mix in the tofu and coat evenly in the buttery mix. Cook through on a medium heat stirring gently occasionally for around 5 minutes
When the mix is piping hot, serve and enjoy!
