Quick crispy tofu bacon, vegan Tofacon!

This comes from playing around with the tofu chicken recipe, here. This version is really very bacon like and really very easy to make. Use with breakfast, in pasta, in a sandwich....really anywhere you would use bacon

This couldn't be easier to make with very simple ingredients. I used liquid smoke and normal paprika, but if you preferred, you could use smoked paprika and skip the liquid smoke. I found the liquid smoke in Tesco, but you can get it from Amazon too

Adjust the cooking time to your own preference - if you want a firm chewy finish, leave it in for longer

1 396 pack of firm tofu

1 1/2 tbsp olive oil

1 1/2 tbsp light soy sauce

2 tbsp nutritional yeast

1/4 tsp salt

1/2 tsp liquid smoke - see notes above

1tsp paprika - see notes above

Preheat the oven to 210c

Mix everything except the tofu together and put into a shallow dish or plate

Drain the tofu and wrap in a clean teatowel and gently squeeze as much of the liquid as you can out. Slice the tofu widthways into approximately 5mm thick slices

Coat the tofu slices evenly with the mix and arrange on a baking tray in a single layer. Put into the oven for 20-30 minutes, depending on how well done you like you Tofacon

The Tofacon will firm up even more as it cools
