Chunky Vegan Coleslaw Recipe


Homemade vegan coleslaw

I love coleslaw! I haven't seen any vegan options readily available, but as it is so easy to make, and homemade is so much nicer and cheaper, that isn't a problem! I used this recipe to taste test my favourite vegan mayonnaise, these are the 3 I looked at here.


You could use a food processor to slice and grate if you wanted to, but I prefer a chunkier coleslaw so I slice and grate by hand



Ingredients


300g chunk of cabbage, I prefer red for colour

1 medium onion

1 large carrot

150g vegan mayo of choice



Method


Thinly slice the cabbage using a very sharp knife. Cut any longer shreds of cabbage in half to make serving easier and place into a mixing bowl


Peel and thinly slice the onion and add to the cabbage


Peel and grate the carrot into the mixing bowl


Using your fingers, mix the vegetable, separating the layer of onions and cabbage


Use a spoon to mix in the mayo and chill before serving
